This is my idea of fast food: A Dr. Praeger's california veggie burger (in the freezer section next to the Boca burgers) on a slice of my homemade wheat bread topped with tomato, red onion, lettuce and a dash of hot sauce. My "fries" are chunks of butternut squash that I roasted last night with a little bit of olive oil. Who says being vegan takes a lot of time and effort?
looks good! Also consider Trader Joe's veggie burger that has really great indian spices! I will try the butternut squash that way this week!!!
ReplyDeleteThanks! I almost bought those! But held off because of all my allergies with certain spices.
ReplyDeleteI cut up the squash, skin and all, into fairly large chunks and lightly sprayed them with EVOO before I roasted in the oven at 375 degrees for about 30-40 minutes until fork tender. Cut the skins off, cut into bite size chunks, season with salt and enjoy. A little drizzle of pure maple syrup is quite lovely too!
