Want fries with that?

This is my idea of fast food: A Dr. Praeger's california veggie burger (in the freezer section next to the Boca burgers) on a slice of my homemade wheat bread topped with tomato, red onion, lettuce and a dash of hot sauce. My "fries" are chunks of butternut squash that I roasted last night with a little bit of olive oil. Who says being vegan takes a lot of time and effort?

  1. looks good! Also consider Trader Joe's veggie burger that has really great indian spices! I will try the butternut squash that way this week!!!

  2. Thanks! I almost bought those! But held off because of all my allergies with certain spices.
I cut up the squash, skin and all, into fairly large chunks and lightly sprayed them with EVOO before I roasted in the oven at 375 degrees for about 30-40 minutes until fork tender. Cut the skins off, cut into bite size chunks, season with salt and enjoy. A little drizzle of pure maple syrup is quite lovely too!
